Teguanyin is a semi-fermented oolong tea that occupies an intermediate position between green teas and red teas. In China, this tea is referred to as blue-green (or turquoise) tea. Teguanyin is a large-leaf tea. For its production, the leaf is harvested more mature than for green tea. Weak fermentation preserves vitamins and tannin, activates caffeine and creates conditions for the formation of new essential oils and compounds that give the tea a distinctive flavour and a particularly strong spicy-fruity aroma.

Teguanyin is one of the most famous Chinese oolong teas from Anxi County (southern Fujian Province). Monks have been cultivating tea in this area since the Tang Dynasty (7th-9th centuries).

Brew about 14 grams per 1 litre of water at a temperature of 100 degrees, infuse 1-3 minutes.
